Why does my honey crystalise - "Candy"

Nectar comes in different colours, ratio of natural sugars, and flavours.

Raw Honey is minimally processed.
Bee & Berry Raw Honey is gravity filtered, cold extracted and unpasteurised. Leaving pollens present and the honey full of enzymes, all the natural compounds that the nectars and bees put in and the best of all flavour.

the scientific reason is
- of the different ratios of Fructose and Glucose in the honey.
- There are pollen present in the honey. and
- Cold weather can encourage this change
as Bee Colonies run at 38 degrees inside the hive.
This is all possible because Bee & Berry Honey is unpasteurised -
Pasteurisation is heating Honey at 70 degrees - stripping the honey of all the enzymes and anti- bacterial qualities
and the honeys ability to "CANDY".

So if your honey is candied enjoy all the beautful flavours that the bees worked hard to create.
If you want it to be "Runny Honey"
decant into a small jar, secure lid and place in a warm water bath.
Just don't get your honey, hotter than 38 degrees - Or you might just ruin those wonderful qualities of raw honey.
